The most commonly used condiments and spices include pumpkin seeds, oregano, purple onion, sour orange, sweet pepper, lime, tomato, annatto, xkatik chili, habanero chili, max chili, and cilantro. Yucatán was known as "the land of pheasant and deer" due to the use of these species as main ingredients in its dishes.
